This recipe for cheeses has been developed following the Pyrenean tradition that consists in associating the sweet taste of cherries to the full-bodied flavor of sheep cheeses. This jam has a three-time flavor: first the black cherry strong taste comes, then the sweet of the dark chocolate appear and covers the palate and finally the Espelette pepper warms your mouth, but it is above all a flavor enhancer in this recipe. This jam can also perfectly fit with Reblochon or Munster cheeses, where the Espelette pepper and chocolate bring a complex but delicious harmony.
Black cherry 60 %, cane sugar 38 %, dark chocolate 0,62 % (cocoa paste, sugar, cocoa butter, emulsifier: soya lecithin), Espelette pepper 0,02 %, concentrated lemon juice, gelling agents: fruits pectin (from the fruits), agar-agar, kirsch, alcohol, natural sour cherries flavor. Allergen : Ø.
