Direction to use:
Sanatine is a powderized, hot soluble cream stabilizer and fixing agent.
All you have to do is to add the wished quantity to regular recipes as it doesn't need to be soaked.
Sugar; Gelatine (pork origin); Modified starch.
Ideal to prepare mousses, coulis or jellies...
Dissolve 50g SUCREA Sanatine in 100ml hot water. Add 60g sugar and SUCREA Compound. Fold in carefully 1,000g of whipped unsweetened cream, a third at a time.
Note: 3g SUCREA Sanatine = 1g gelatine.
10g SUCREA Sanatine = 2 leaves gelatine.
